Buffalo Chicken-Stuffed Sweet Potato

Ingredients

  • Stir-fry:
  • 1 lb. organic chicken

  • 1 cup hot sauce

  • 1/4 cup coconut oil

  • 2 medium sweet potatoes

  • 2 tbsp. green onion (optional)

Directions

  • Mix the hot sauce and coconut oil together with a whisk.
  • Set a slow cooker to high and add the chicken.
  • Pour the hot sauce and coconut oil mixture over the chicken so it is fully covered. Cook on high for 4 hours, checking occasionally to make sure the chicken is still covered in sauce.
  • When there is an hour left for chicken cook time, preheat the oven to 350 degrees F.
  • Pierce the sweet potato and place it in the oven for 30 to 40 minutes.
  • After 4 hours, shred the chicken using a fork. It should shred easily. If not, continue heating the chicken in the slow cooker.
  • Create four equal portions with the chicken.
  • Cut the sweet potatoes in half and top with the chicken and green onion.
