Ingredients

  • 2 Tbsp. olive oil

  • 1 medium onion, diced

  • 1 ea red bell pepper, chopped

  • 1 Tbsp. garlic, minced

  • 2 cans cans black beans

  • 1 can can tomato sauce (no sugar added)

  • 1/2 cup uncooked quinoa, rinsed

  • 1 Tbsp. chili powder

  • 1 tsp. cumin

  • 1 tsp. dried oregano

  • 1 1/4 cups water

  • sea salt, to taste

Directions

  • In a medium skillet, heat olive oil over low heat. Add in diced onion, red bell pepper and garlic. Sauté for 5 to 7 minutes or until translucent.
  • Add in beans, tomato sauce, quinoa, water and spices, and simmer on low for 30 minutes or until quinoa is tender.
