Ingredients

  • Stir-fry:
  • 2 Tbsp. coconut oil, divided

  • 1 lb boneless, skinless chicken breasts

  • 1 ea bell pepper (any color), diced

  • 4 cups broccoli

  • 1 medium zucchini, sliced

  • 1 medium onion, chopped

  • 4 cups cauliflower rice, cooked

  • Sauce
  • 1/2 large orange, juiced

  • 1/4 cup chicken stock

  • 2 cloves garlic, minced

  • 1 Tbsp. orange zest

  • 3 Tbsp. coconut aminos

  • 1/4 tsp. ground ginger

Directions

  • In a 10-inch skillet, heat coconut oil over medium heat. Add chicken breasts, bell pepper, broccoli, zucchini and onion until cooked through.
  • In a separate skillet, heat remaining olive oil and sauté cauliflower rice until browned and cooked through.
  • In a separate bowl, whisk together sauce ingredients. Pour into chicken and vegetable mixture and simmer until sauce reduces by half.
  • Serve with cauliflower rice.
