Ingredients

  • 2 cups uncooked quinoa

  • 1 cup gluten-free oats

  • 1/2 cup raw almonds

  • 1/2 cup cashews

  • 1/4 cup almond butter

  • 1/4 cup applesauce

  • 2 Tbsp coconut oil

  • 1 tsp. cinnamon

Directions

  • In a medium mixing bowl, combine quinoa, nuts, cinnamon and oats until well combined.
  • In a separate small bowl, combine coconut oil, almond butter and applesauce and microwave on low heat until the mixture reaches a thin consistency.
  • Combine the dry and wet ingredients together and spread mixture on a 9×13 cookie sheet sprayed with nonstick oil.
  • Bake at 350 degrees Fahrenheit for 25 to 30 minutes or until lightly browned, stirring every 10 minutes.
