Ingredients

  • 15 oz. Canned tomato sauce (1 standard can, no sugar added)

  • 15 oz. Canned, diced tomatoes (1 standard can)

  • 15 oz Canned kidney beans, drained (1 standard can)

  • 1 lb. Ground beef (90% lean)

  • 1/2 large Yellow onion, chopped

  • 2 medium Zucchinis, chopped

  • 1 cup Carrots, chopped

  • 2 cloves Garlic, minced

  • 2 Tbsp Chili powder

  • 1/2 tsp Cumin

  • 1 Tbsp Dried oregano

Directions

  • In large pot, brown ground beef and chopped garlic over medium heat until meat is cooked thoroughly.
  • Add onion, carrots, and seasonings to skillet and cook over medium-high heat about 5-6 minutes. Next add zucchini and cook another 2 minutes, stirring well.
  • Add tomato sauce, diced tomatoes, and beans to the pot and bring to a boil, stirring frequently. Reduce heat and simmer for 20 minutes.
