Ingredients

  • 1 Large Head Garlic (1 whole “bunch” of garlic)

  • 1 tsp Olive Oil

  • 2 1/2 cups Canned garbanzo beans, drained

  • 1/3 cup water

  • 1/4 cup Lemon juice

  • 4 tsp Tahini

  • 1/2 tsp Cumin

  • 1 1/2 tsp Sea salt

Directions

  • Preheat oven to 400 degrees Fahrenheit.
  • Slice off the pointed head of garlic, place the bottom on a piece of aluminum foil and drizzle with olive oil
  • Create a pouch for the garlic using the aluminum foil in foil and roast in the preheated oven until soft (45-50 minutes)
  • Squeeze the roasted cloves of garlic into a food processor. Add the remaining ingredients. Puree until smooth and creamy.

Notes

  • This recipe makes approximately six 1/2 cup servings.
